I plan on using PiMAME to create a classic gaming system. My question is can I use any of those USB format classic controllers?

Most should work. Some might need a driver though. I haven't used any USB controllers with mine though except for an old Xbox one.

The fact is : With an xbox controller, you launch the driver before the menu, so you can navigate with your pad / joystick in the menu.
With a generic USB controller, the pad will be initialized by emulators. So (for now and without any driver) it can't be use to navigate in the menu.
Another solution is to launch directly an emulator of your choice at startup, but of course it involves that you just use one emulator...
