Im in the process of buying parts etc to start an arcade build. I was considering using a usb touchpad instead of a mouse. Would this by compatible with PiMAME/RPi?

it is compatible with the rpi. You really won't use it in PiMame (at least not in its current state). Everything is done with the keyboard in PiMAME.

The new menu system (In future 0.8 release) is now compatible with mice and joysticks too. It will work but you will have to either wait until 0.8 or try the unfinished menu now:
